Baking has always been something which is close to my heart. It has always helped me. Be it when I’m happy, sad or angry.
These past few days were very gloomy and I was, well kind of depressed. But as they say, “A friend can lift you up even when you have pushed yourself down a valley.” I know! Very emotional. But I can’t help it you know. It’s just that time in my life.
So I’m watching MasterChef Australia ( Btw, I’m Supporting Matt 😛 ) and my friend randomly calls and says “let’s bake a cake!!” And I mean I am not the one to turn down an amazing offer like this 😀
And me being silly me, I start jumping like a maniac and start looking through my Women’s Weekly BAKING book. And I finally come to a conclusion that we should bake something different. And upside cake was something which I had never baked. So we decide to bake UPSIDE DOWN PEAR AND PISTACHIO CAKE.
So here is the recipe for the cake. You should definitely try it!
UPSIDE DOWN PEAR AND PISTACHIO CAKE
PREP+COOK Time 50 minutes
SERVES 8
INGREDIENTS :
1/4 cup (35g) coarsely chopped unsalted pistachios
1 cup (220g) firmly packed brown sugar
1 large pear (330g), unpeeled, cored, sliced thinly
185g butter, unsalted, softened
3 eggs
1/4 cup (35g) plain flour
1 and 3/4 cups (210g) almond meal
(ALMOND MEAL also known as finely ground almonds, powdered into a flour-like texture and used in baking or as a thickening agent.)
DIRECTIONS :
1. Preheat oven to 200°C/180°C. Grease the cake pan; line base with baking paper.
2. Combine pistachio nuts and 2 tablespoons of the sugar in a small bowl; sprinkle over base of pan, top it with pear slices.
3. Beat butter and remaining sugar in small bowl with electric mixer until light and fluffy. Beat in eggs, one a t a time. Stir in sifted flour and almond meal.
4. Pour the mixture into the pan; bake for about 35 minutes. Stand the cake in the pan for 10 minutes before turning upside down onto the wire rack. Serve the cake warm or cold.
I know the presentation is a little bit ehh. But it tastes freaking good. You should definitely try this:D

Thank you so much:) You can use cake raiser for baking instead of eggs. You can find cake raiser in any confectionery 🙂

Yeah. Thanks a lot. I was thinking of using a paste made of cornflour. I guess will have to go searching for cake raiser. 😛
